Five Ingredient Friday


We have had it twice in the past week.

Chicken Quesadillas

Simple and very yummy
1 package flour tortillas
1 package Oscar Meyer pre-cooked and packaged Southwestern chicken (cut into smaller pieces)
1 package mexican style shredded cheese

Spray frying pan with no-stick cooking spray. Heat your chicken in frying pan. Remove from pan and put on plate. Take one tortilla and put some shredded cheese and chicken on one side. Fold torilla in half. Spray frying pan again with no-stick cooking spray. Place tortilla in pan. Lightly brown both sides of tortilla. I cut each tortilla into three pieces after cooking (easier for the kids to handle). Serve with sour cream, salsa, lettuce tomato. I also serve this with corn or mexican corn.

I haven't tried the cooked chicken from Oscar Meyer yet, but I love making cheese quesadillas with that cheese blend. I've also used my own leftover chicken, but it'd be nice to have a backup when I don't have any cooked.
