Early Five Ingredient Friday

We will be leaving tomorrow to take the kids to an indoor waterpark and stay overnight. We are all very excited to get away for a night and have fun. This will be D's first experience staying in a hotel, so I am not anticipating much sleep. But very much looking forward to his first time and all of the fun we are sure to have.

I went on Monday for jury duty and did not have to serve. I was home by noon. I spent the afternoon with my sister, her children and mine. We took them to the park and just played. My sister left for home yesterday. Though I do miss her and the kids, it was nice to have a bit of quite in the house last night. With an impressionable 2 year old, a 7 year old, two 8 year olds and a 9 year old, things got pretty noisy. Lots of fun though.

We went to M's school last night and found out who her teacher will be this year and found her classroom. I cannot believe school starts next week. What a short summer it was. Though I do look forward to getting back into a routine. I am now the mom of a big 3rd grader!

Blender Salsa

3 (10 ounce) cans diced tomatoes with green chile peppers, partially drained
1 (6 ounce) can tomato paste
1 bunch fresh cilantro leaves
2 tablespoons lime juice
1 small onion


DIRECTIONS:
In a blender or food processor, puree the diced tomatoes with green chile peppers, tomato paste, cilantro, lime juice and onion. Serve at once, or refrigerate in sealed containers. Yum, yum, yum! I do love some good salsa and fresh chips.

Glad you all like my recipe. We are now home. A lot of traveling in 2 days and lots of fun. The waterpark is in Iowa. It is a blast.
