Favorite Ingredient Friday (Muffin Edition)






This is the best blueberry muffin recipe I've ever tried.

4 c. flour
4 tsp. baking powder
1/2 tsp. salt
1 c. butter/margarine, softened
2 c. sugar
4 eggs
1 c. milk
2 tsp. vanilla extract
2 c. frozen blueberries, unthawed

Topping:

2 Tbls. sugar
1/2 tsp. ground nutmeg (I use 1 Tbls. brown sugar instead)

In large bowl, combine the flour, baking powder and salt. In a mixing bowl cream butter and sugar. Add eggs, milk and vanilla; mix well. Stir in the dry ingredients just until moistened. Fold in frozen blueberries. Fill greased or paper-lined muffin cups 2/3 full. Combine sugar and nutmeg; sprinkle over muffins. Bake 375 degrees for 20-25 minutes Cool in pan for 10 minutes, then transfer to wire rack Makes about 2 dozen

Your welcome. It does make a lot, but the recipe can easily be cut in half or they do freeze well.

Overall I find most blueberry muffins to be dry and tasteless but hubby loves them so I am going to gives yours a go... Thanks! He will be thrilled!
